Each food section has a introduction that is extremely helpful in explaining all you need to know about various pastas, rices, meats, vegetables and how to prepare them. I originally took this book out of the library and I enjoyed it so much, I knew I had to purchase it. This book does share how to cook EVERYTHING and it is a nice thick book. One of the things I really enjoy about this book is after a recipe, he shares many, many ideas for variations on that particular recipe. Another thing I really like about it is, in addition to the recipes, he takes the time to explain the basics of things like the differences between flours, oils, spices, and so on.
