I love the new style of the Signature line of Calphalon cookware! It replaces an old and worn Calphalon wok. Perfectly non-stick and easy to clean. Although dishwasher and oven safe, I often just wash by hand. I gave it 4 stars because I was expecting a larger flat surface area for cooking like my older wok; this one has about 5inches or so of flat surface area. I suppose it’s almost a true wok style but because it was replacing an older version with a much larger flat surface cooking area, it’s limited what I used to be able to cook in these woks.BB&B Customer

I have a Thermador induction cooktop and this pan definitely is not compatible. It was disappointing given the cost and since I've been looking for quite awhile to find a high quality, small non-stick pan to prepare egg dishes. It passed the magnet test, so I don't know if it is a manufacturing flaw on the one I received or it just isn't compatible with my particular cooktop. In either case, I'm planning to exchange it for another brand. On the positive, it is a nice looking and sturdy pan. This is NO good . The price is great but the item itself isn't worth having even if given for free. The non-stick surface is a joke but I wouldn't have complained if that were the only problem due to it's very low cost. The issue is that the non stick coating peels off in small chunks and contaminates the food. I only use plastic or wood utensils on all my non-stick cooking vessels so no , I didn't scrape it with anything that could have cause this to happen. I would NOT recommend this item .Ana
Definitely would not recommend, not even for the price. The nonstick coating failed by the third use, and I get a lot of food stuck to the bottom every time now. If you look online, woks are not designed to be used with nonstick coating anyways. If I could choose again, I would've bought a nonstick saute pan instead. I'm not sure about the non-stick coating-it doesn't really perform very well. BUT, and for me this is a big deal: This is the ONLY wok I have ever used (and I've probably gone through 20 of them over the years) that produces the insanely hot temperatures that the woks found in purpose-built Chinese kitchens do, and in my case, it does it on an electric coil burner! This has been a universal stumbling block for anyone trying to achieve results that taste very restaurant-like. This thing gets scary hot-and that's a very good thing. The heat drops a little when vegetables or meat/fish are added, but it gets right back up there quickly. My only advice is to forget treating this like most non-stick cookware. It will melt a plastic spatula, so use metal, season it with a little oil after you have cleaned it, and don't worry about scratching the non-stick coating. I was shocked at the temperature this wok achieves, which has always been a barrier to achieving superior results in home kitchens, simply because virtually all home fire codes won't allow for a restaurant-level gas feed. Just be prepared to have everything you need at hand if you are following a Chinese cookbook's recipe, which will usually call for restaurant cook time. Five bucks? How can this be? It is. I’m older and working to reduce fat in recipes. I’ve cooked on “real” woks (steel and iron over 15,000 btu) for years. Recently, I’ve mostly switched to quality nonstick. Tremendous success! When a curry calls for 2-3 Tbs oil is called for I’ll use 1/2 Tbs. with the lower heat recommended. After the blooming of onions and spices I’ll finish in an Instant Pot. I've been on the hunt for a great wok for a while and this has been my favorite so far. I like that it is dishwasher- and oven-safe and that it has a lid, but you should really only use wooden or silicone spoons/spatulas on it. I used metal tongs once to serve noodles out of it, and the bottom got a bit scratched up. Otherwise, the pan heats quickly and distributes heat really well.LauradM
We received this set for our wedding a couple years ago. Although Calphalon's website says these are dish washer safe, we still had been very careful to handwash them. Well, somebody put the 2.5 quart in the dishwasher once and it's now completely ruined. The outside turned a light gray, makes a strange sparking sound when it's on the burner, and the inside is chipping. These pots and pans are way too high maintenance. This is a great wok, especially for the price! It does start to discolor once you start using it, but that's not an issue. Even though it is seasoned, follow the instructions on the card that comes with it to do a quick season before your first use. I've been using it for several months now and it is practically non-stick. Just follow the care instructions and basically treat it like cast iron. My first choice when I decided that we needed a wok was a cast iron model. This is based upon my history of Cajun (and Southern) cooking. Anyone that argues that the utensils do not influence the recipe outcome is not telling you the truth! But…the 'bride' suggested that my interest in Asian cooking just might be short-lived (wrong), and that we might go with something slightly less expensive. That is where I discovered the Aroma model. I talked myself out of the cast iron wok, based upon the argument that the Aroma unit would be self standing on the cooking island, and free up the stove top for doing all of the other associated items. I also convinced myself that I would have even better heat control with an electric wok. All this was to initially accommodate my better half…. I am pleased to state that she (and, more importantly, me) was right. The Aroma heated quickly, and dependently, and has performed quite well. The non-stick surface has been as advertised, and cleans up perfectly with just a few paper towels. All of my recipes have gone as hoped, and I have not find anything negative to tell you in regards to it's cooking performance. The freeing up of the stovetop has been a plus, as we usually have several side dishes going on at the same time. My caution will be if you use an extension cord to use the Aroma. Do not expect a standard small gauge cord to do the job…the unit draws too much to safely do this. If you use an extension cord, feel the connection between the short Aroma cord and the extension after use…and if you sense any heat you need to upgrade to a bigger gauge. If it is 'warm' then it has been overexerted, and you have compromised both safety and heat control. Err on the conservative side, and use a heavier gauge. Last item…and totally subjective…is that the temperature control knob position arrow is almost impossible to see at a glance. I used a dab of White-Out to highlight the arrow, and now I can see its position without a flashlight…. Nice product, that performs as promised.RockyRoad

Her only problem she had with the wokk was that she had no way of telling how much temperature she was using. There seemed to be no markings on the knob or some sort of indicator. Also another small issue is that the cord and base does not separate from the unit so it is a bit difficult to clean. I'd say everything being even, it is a good wokk for an electric unit. The first time I used this, it burned the entire bottom. It appears after some experimentation that the thermostat is useless and does not work. It is basically either heating full force or turned off. It does not cycle off and on to maintain a temperature. I am guessing that was the problem with the one reviewer that gave it one star also. If cooking a small tiny layer at the bottom quickly, say just some meat strips and standing there, that might work but you could not leave it and would have to continue to stir it until it was done. I see no way to cook more than a serving or two in the large wok. I am returning it. Defective thermostat yet another hit or miss with imports.Alfred

I only went and purchased this item solely on the fact that you advertised this item as a 5 qt. capacity wok. i just received this & it is a 4 qt. capacity wok as shown on my picture, i could have gotten this item at numerous venders in my area for a lot less & not pay for shipping & handling. I purchased the NuWave Wok and prepared stir fry using the preset temps. I noticed that the Wok was seriously stained. I attempted to remove the stain using an abrasive cleaner with no success. I then contacted NuWave customer service for support. NuWave had no advice for removing the stain, but since I used an abrasive cleaner they voided the warranted. Oh, they offered to sell me a new Wok “at a discount”, which was certainly seemed like “no discount” to me and others who witnessed it. My advice is to stay away from NuWave. They promise much and deliver little!!!TJ
The induction base is nice. It is powerful and easy enough to learn with the instructions. I was able to use it to season the wok, which is mostly non-stick. I use a bamboo wok cleaning brush to keep the non-stick surface. All of this is to say I try to take care of it. With the price being paid for the product I expected a wok that is more robust, more quality feeling. I think this wok is pretty good quality. It comes with a lid that is glass, so you can see the food that you are cooking. It has a metal handle on the lid. I wish it had rubber around the lid handle. The handle would sometimes become fairly warm to touch, so I would need to use an oven mitt or a towel to remove it because I was worried about burning myself. There is also a tiny hole in the lid. While cooking, steam would escape out of the sides of the lid.The pan is a heavier material which I feel makes it better quality. The handle on the pan is also metal. The surface is a nonstick one, which we typically buy and there were no issues with good sticking to the pan. The bottom of the pan is flat but has words etched in the bottom. We own a flat top, so scratching the surface of it worries me. I would prefer the product to be completely flat to prevent any scratching from occurring. Overall, I really like this product.Nori11

Wow! I'm impressed! This is a very heavy unit. The steel is very thick, and the handles are very sturdy as well. The handles are very securely welded to the wok. 18" is definitely on the large side of what the average home cook would be able to use. This work was very easy to season ( more so than the 16 in black mandarin wok ). It also seems stronger than 18 gauge but that might be due to it not being as deep. That's the other issue however. It will be harder to stir fry without stuff flying out since its not as deep as the other woks. Handle not front short, is thick so that heat to the handle is not bad. Short handle is placed well, but will get hot fast, use pot holder to grasp. Only had it for 2 months. The wok looks good, not too heavy. 12" is a bit small for a wok which should be multifunctional. It is very noisy when using a regular metal spatula and ladle because of the laser etched surface. The same surface also makes it very difficult and time consuming to get it 100% cleaned perfectly. It leaves a dark gold brownish tint or stain every time after use. Non stick surface only works well with certain ingredients. A flour coated cutlet will stick on the wok like any other pan which has to be soaked for a while to get it cleaned. I think it works well or better than an average non stick pan/wok. So far it withstands the rigorous cleaning that is required each time and time will tell if it lives up to what the CEO of Hexclad promised. It is pricy for a small wok without a lid/top.Kin
